Research on Fermented foods of wheat flour in Mongolia

Abstract

The Mongolian nomads have been consumed their traditional foods. Recently many Russian and Chinese foods have been imported into Ulanbator, the capital of the Mongolia. Therefore, the inhabitants in the capital have a modern standard of food style. We visited Ulanbator and its suburbs in September2003to carry out the survey about the fermented food of wheat flour. The inhabitants in the capital consumed the many kinds of bread, and the nomads consumed the food due to the wheat flour. Yeast and some bacteria in the bread were found using the microscope.
