Surveillance of Hygiene Management at Jointly-used School Meal Preparation

Abstract
Education in hygiene management has been reported to be more effective with continuous training and presentation of numerical results of rapid hygiene tests. We conducted surveillance of hygiene management, for the first time, at a jointly-used school meal preparation facility of Gifu City, which started its full operation this year (2011). Objects including cookware, doors and cooking staff’s fingers were examined using the ATP swab test (19 objects), the stamp culture method (6 objects) and the wipe test (8 objects). The results were satisfactory in every object. Then, we gave the facility staff further instruction on providing safer school meals referring to these results. Now it is required to continue such surveillance and to compile an index to interpret test results as soon as possible.
